What is Dry Aging
Dry-aging is a process where prime cuts of beef are held in a specific environment of temperature and humidity for an extended period of time. This natural process produces the most delicious and tender beef without the need for additives.
At FX Buckley butchers, we use a state-of-the-art dry-aging chamber that maintains a precise environment of 4°C at 80% humidity for a minimum of 28 days. This allows us to take advantage of the natural enzymes within the beef. These enzymes break down tougher proteins to tenderise the meat. As a result, you'll be left with a melt-in-the-mouth tender steak that doesn't shrink or toughen-up when cooked.
In addition to tenderising the meat, the dry-aging process also concentrates the natural sugars, protein fragments, and other flavourful compounds present within the beef. This results in mouth-watering aromas and flavours that are rich, beefy, and often have buttery, nutty, and cheesy notes.
